...and they are mechanically pressed to release the peanut oil (which is actually how they make peanut oil!), and the residue left over (my friend calls it the peanut fluff, lol) is "PB2", aka: defatted, dehydrated peanut butter powder!
Calorie and fat content: Keep in mind it takes FOUR Tbsp. OF PB2 to rehydrate to the equivalent of TWO Tbsp. Of regular PB. So keep that in mind when comparing kcals and fat content.
It's still pretty awesome, with 4 tbsp of PB2 = 90 kcals and 3 gr. Fat, vs twice the amount of kcals in 2 Tbsp of PB and a shitload of fat in PB.
Is PB2 as rich and creamy and delish as regular PB, well, of course not!!! But the trade off in kcals is awesome, especially if you are going to use the PB2 in recipes or smoothies or Thai peanut soup!
If I want to eat PB straight out of the jar or on crackers, I'm going for "Peanut Butter & Co." brand peanut butters; they come mixed with deliciousness in their choices of white chocolate, dark chocolate dreams, maple syrup, cinnamon raisin, honey, and good old fashioned plain PB! http://ilovepeanutbutter.com/
So I feel better knowing the defatted PB powder has not been chemically processed! Keep in mind, unless you are buying organic, you are probably eating peanuts laden with pesticides! Bon Appetit!
