I love beets: their color, earthy flavor, versatility. I roasted a bunch of beets with cinnamon, nutmeg, cardamom, clove, and whole cumin, s&p. I sautéed a bunch of kale in water and a Tbsp of chili-infused EVOO, with more cinnamon, clove, and nutmeg, s&p. Perfect to eat separately, but then, I wanted soup! Pureed a cup of the beets with some water, then simmered with the kale, a bit of cottage cheese for protein (optional), and topped it all off with a dollop of yogurt (sour cream is great too!) and carrots for color. Sooooo filling, nutritious, low-cal, and nourishing! Yay! Beets!
